LADAWAN Noodles

The Colors of Nam Ngiao & The Nam Ngiao Kit

This installation is inspired by Nam Ngiao, one of Chiang Rai's most iconic local dishes, in which fresh rice noodles are the main ingredient. The colored fabrics represent the various ingredients that make up the dish, such as tomatoes, pickled mustard greens, bean sprouts, spring onions, coriander, and crispy pork rind—symbolizing how individual elements come together to create a single bowl of food.

The work also explores the relationship between art, everyday life, and the local community by drawing directly from the ingredients sold at Chiang Rai Municipal Fresh Market No. 1. As an extension of the installation, the ingredients are sourced from vendors within the market and assembled into ready-to-cook Nam Ngiao meal kits, allowing visitors to take the experience home and prepare the dish themselves.

By connecting artistic expression with local commerce and culinary tradition, the installation transforms the act of viewing into an opportunity to engage with Chiang Rai's cultural heritage through cooking, supporting local vendors while celebrating the shared stories behind a beloved regional dish.
